Air Fryer Stuffed Mushrooms

- 6 Large mushrooms (cleaned and stems removed (hollowed out))
- 1 cup Fresh spinach (finely chopped)
- 3 tbsp Cream cheese (Philadelphia style)
- Dried oregano (to taste)
- 1 tbsp Caramelized onion (pre-made)
- 50 g Llanero cheese (grated or in small pieces for gratinating)

Clean the mushrooms and remove the stems to prepare them for stuffing.

In a bowl, place a handful of fresh spinach and chop it finely.

Add 2 or 3 teaspoons of cream cheese to the bowl.

Incorporate a bit of dried oregano and a tablespoon of caramelized onion.

Mix all the filling ingredients vigorously until a homogeneous paste is obtained.

Generously fill the cavity of each mushroom with the prepared mixture.

Grate or crumble a bit of cheese (the author suggests llanero cheese) and cover the top of each mushroom.

Place the mushrooms in the air fryer basket.

Cook at 180°C (350°F) for 10 minutes until the mushrooms are tender and the cheese is golden and melted.
Notes
The author uses llanero cheese for the final touch, but you can use mozzarella or any cheese that melts well. The caramelized onion provides a very special sweet contrast.
