Ingredients
- 125 g Cucumber, sliced
- 18 g Peanut butter
- 12 g Chili oil
- 1 tbsp Soy sauce
- 0.5 Lime juice (The juice of half a lime, approximately 15 g.)
- 50 g Red cabbage, thinly sliced
- 150 g Cooked chicken (Cook using your preferred method: in a skillet, in an air fryer, poached, in the oven, or use already-cooked roasted chicken. The 150 g corresponds to the amount ready to incorporate.)
- 0.5 tsp Sesame seeds
Steps
- 1
Prepare the ingredients: slice the cucumber, thinly slice the red cabbage, and, if necessary, cut the cooked chicken into bite-sized pieces. Use a bowl or container of approximately 720 ml (24 oz) with an airtight lid.
- 2
Cook the chicken using your preferred method—in a skillet, in an air fryer, poached, in the oven, or as roasted chicken. Make sure it is fully cooked through, then let it cool slightly and weigh out 150 g.
- 3
Add the sliced cucumber to the bowl.
- 4
Add the peanut butter and chili oil. Distribute them over the cucumber so they mix more easily.
- 5
Pour in the soy sauce, then add the juice of half a lime.
- 6
Add the thinly sliced red cabbage and the cooked chicken pieces.
- 7
Sprinkle the sesame seeds over the mixture.
- 8
Seal the bowl tightly and shake it vigorously until the peanut butter, chili oil, soy sauce, and lime juice evenly coat the vegetables and chicken. If the container does not have a lid, mix thoroughly with tongs or a spoon.
- 9
Serve immediately, or refrigerate the salad until ready to eat.

The publication indicates approximately 451 kcal, 14 g of carbohydrates, 26 g of fat, and 43 g of protein per serving. The chicken can be prepared in advance. For the best texture, add or mix the salad just before serving. The transcript also mentions garlic, honey, and onion, but these ingredients do not appear in the main written ingredient list and their quantities are not indicated; they are therefore not included in the extracted recipe.
