Dump & Bake Nacho Rice
A saucy, cheesy Mexican-style rice bake made by combining beef mince, vegetables, salsa, taco seasoning, rice, and stock in one dish. Serve it hot with crunchy corn chips and fresh toppings such as sour cream, avocado, and pico de gallo.

Ingredients
- 500 g Beef mince
- 1 Onion (Diced)
- 1 Red capsicum (Diced)
- 2 packets Mingle taco seasoning (Packet weight was not specified; estimated at approximately 28 g per packet)
- 1 cup White long-grain rice (Uncooked and rinsed)
- 600 g Salsa
- 500 ml Beef stock (Have a little extra stock or water available if the rice needs additional liquid)
- Shredded cheese (Use an amount to your liking)
- Sour cream (To serve, to your liking)
- Avocado (To serve, to your liking)
- Corn chips (To serve, to your liking)
- Pico de gallo (To serve, to your liking)

Preheat the oven to 200°C (400°F). Use a large, deep baking dish that can be covered tightly with foil.

Add the diced onion and diced red capsicum to the baking dish.

Add the salsa and beef stock to the dish, followed by the taco seasoning.

Add the rinsed uncooked rice, then place the beef mince into the dish. Mix everything thoroughly so the ingredients are evenly distributed and all of the rice is fully submerged beneath the liquid.

Cover the baking dish tightly with foil to retain the steam. Bake for 45–50 minutes.

Carefully remove the foil and stir the mixture thoroughly, bringing any rice from the edges or surface into the liquid.

Re-cover the dish with foil and continue baking until the rice is tender and the beef is fully cooked, approximately 65 minutes total baking time before adding the cheese. If the rice is still firm or the mixture looks dry, add a little extra beef stock or water before continuing to bake.

Remove the foil. Sprinkle shredded cheese evenly over the top, using as much as desired.

Return the dish to the oven uncovered and bake for another 10–15 minutes, until the cheese is melted, bubbling, and lightly golden.

Serve hot with sour cream, avocado, corn chips, and pico de gallo.
Notes
The recipe states approximately 65 minutes of covered baking before the final 10–15 minutes uncovered with cheese. Check that the rice is tender and the beef is fully cooked before serving. Extra stock or water may be added if the rice needs more liquid.
