Ingredients
- 4 Pork chops (thick-cut, bone-in or boneless)
- 2 tbsp Honey garlic seasoning (Fire and Smoke brand recommended)
- 1 tbsp Olive oil (for searing)
- 1 Shallot (diced)
- 3 cloves Garlic (fresh, minced)
- 0.25 cup Sherry wine vinegar (to deglaze)
- 1 Orange (zested and juiced)
- 2 tbsp Honey
- Black pepper (freshly ground, to taste)
- 2 Scallions (sliced for garnish)
Steps
- 1
Preheat your oven to 400°F (200°C). Season the pork chops generously on both sides with the honey garlic seasoning.
- 2
Heat a stainless steel skillet over medium-high heat with a tablespoon of oil. Sear the pork chops on both sides until a golden crust forms.
- 3
Transfer the skillet to the preheated oven and cook until the pork reaches an internal temperature of 145°F (63°C).
- 4
While the pork is in the oven, dice the shallot and mince the fresh garlic.
- 5
Remove the pork chops from the oven and transfer them to a plate to rest, leaving the pan drippings in the skillet.
- 6
Place the skillet back on the stovetop over medium heat. Add the diced shallots and garlic to the pan drippings and sauté until fragrant.
- 7
Deglaze the pan by adding the sherry wine vinegar, scraping up any browned bits from the bottom.
- 8
Add the zest and juice of one whole orange, the honey, and fresh ground pepper. Stir well to combine and let the sauce simmer for 1-2 minutes until slightly thickened.
- 9
Return the pork chops to the skillet and baste the glaze all over the top of the meat.
- 10
Place the skillet under the broiler for 2-3 minutes until the glaze is bubbly and beautifully caramelized.
- 11
Garnish with sliced scallions and let the meat rest for 5 minutes before slicing and serving over rice.
Notes
If you do not eat pork, this recipe works excellently with turkey chops or chicken breasts. Ensure you adjust oven times accordingly for different proteins.
