Ingredients

  • 1 whole salmon filet (skin on, trimmed)
  • 0.75 cup brown sugar
  • 1 cup olive oil
  • 4 tbsp Cajun seasoning
  • 4 tbsp smoked paprika
  • 2 tbsp garlic powder
  • 2 kosher salt (heavy pinches)
  • 1 tbsp black pepper
  • 1.5 tbsp smoked chili flakes

    Trim the salmon fillet to shape it if necessary. Score the salmon diagonally in both directions to create a crosshatch pattern, being careful not to cut through the skin.

    In a medium bowl, combine the brown sugar, olive oil, Cajun seasoning, smoked paprika, garlic powder, kosher salt, black pepper, and smoked chili flakes.
