Steps
Combine the black pepper, garlic powder, onion powder, and celery salt in a small bowl. Mix to make the seasoning blend.
Finely shred the rotisserie chicken in a stand mixer. Alternatively, shred it by hand or in a blender; the finished pieces should be very small. Set the shredded chicken aside.
Mince the celery very finely, almost to a puree. The creator uses 3 tablespoons, although 2 tablespoons is the stated amount needed.
Put the shredded chicken in a bowl. Add the minced celery.
Add the Duke’s mayonnaise and 2 teaspoons of the seasoning blend.
Mix until smooth, about 20 seconds.
Refrigerate the chicken salad for a few hours or overnight; it can also be eaten right away, but chilling helps the flavors meld.
To make a sandwich, cut open a croissant. Place lettuce on the top slice, add two scoops of chicken salad, then close the sandwich and press it together.
Serve with a pickle on the side.
Notes
The creator uses rotisserie chicken for convenience but says steamed or boiled chicken breast tenderloins are the intended chicken. The recipe does not specify how many sandwiches the chicken salad makes or exact quantities for the lettuce and pickle.
