5-Ingredient One-Pot Biscoff Cheesecake

Ingredients
- 4 Lotus Biscoff biscuits (crushed, plus half a biscuit for garnish)
- 1 tbsp Unsalted butter (melted)
- 100 g Full-fat cream cheese (room temperature)
- 1 tbsp Icing sugar
- 2 tbsp Lotus Biscoff spread (divided (1 tbsp for filling, 1 tbsp for topping))

Crush the Lotus Biscoff biscuits into fine crumbs using a bowl or a plastic bag.

Press the mixture down gently into the bottom of the ramekin to form an even base.

In a separate small bowl, whisk together the cream cheese, icing sugar, and 1 tablespoon of Biscoff spread until the mixture is smooth and fully combined.

Melt the remaining 1 tablespoon of Biscoff spread in the microwave for a few seconds until runny.
