Ingredients

  • 1 L whole milk (for the custard base)
  • 2 vanilla beans (split and seeds scraped; or use vanilla paste)
  • 180 g granulated sugar
  • 3 eggs (large)
  • 90 g cornstarch (to thicken the custard)
  • 40 g unsalted butter (added to the hot custard)
  • 250 g all-purpose flour (for the pâte brisée)
  • 125 g cold unsalted butter (cubed, for the pastry)
  • 1 tsp salt
  • 50 ml cold water (to bind the pastry)

    Prepare the pâte brisée by mixing the flour and salt in a bowl. Work in the cold cubed butter with your fingertips or a pastry cutter until the mixture resembles coarse crumbs.

    In a large saucepan, bring the milk and vanilla (seeds and pods) to a simmer. Remove from heat and let infuse for 10 minutes.

    In a separate bowl, whisk the eggs and sugar until pale, then whisk in the cornstarch until smooth.

    Remove the vanilla pods from the milk. Slowly pour the warm milk into the egg mixture while whisking constantly to temper the eggs.
