Ingredients

  • 2 tbsp oil
  • 2 garlic cloves (minced)
  • 2 cup dry pasta (such as shells or small shapes)
  • 2.5 cup chicken broth
  • 0.25 cup heavy cream
  • 3 tbsp butter (plus an extra pat for finishing)
  • 0.5 cup parmesan cheese
  • salt (to taste)
  • black pepper (to taste)
  • parsley (for garnish)

Steps

  1. 1

Heat a large skillet over medium heat.

  2. 2

Add 2 tablespoons of oil to the skillet.

  3. 3

Add the minced garlic and sauté until fragrant, being careful not to burn it.

  4. 4

Toss in the 2 cups of dry pasta, stirring constantly to ensure the noodles are well coated in the oil.

  5. 5

Pour in 2 1/2 cups of chicken broth.

  6. 6

Bring to a simmer and cook, stirring occasionally, until the pasta is tender and has absorbed all the liquid.

  7. 7

Stir in 1/4 cup heavy cream, 3 tablespoons of butter, and 1/2 cup parmesan cheese.

  8. 8

Continue stirring until the cheese is melted and the sauce is creamy.

  9. 9

Season with salt and pepper to taste.

  10. 10

Finish with a sprinkle of fresh parsley and an extra pat of butter before serving.

Notes

This is a one-pot method where the starch from the pasta helps thicken the sauce as it cooks in the broth.
