Ingredients

  • 0.25 cup extra-virgin olive oil
  • 4 garlic (cloves, peeled and smashed)
  • 28 oz canned whole peeled tomatoes (crushed by hand)
  • kosher salt (to taste)
  • 2 tbsp unsalted butter (cut into pieces)

Steps

  1. 1

In a large skillet over medium heat, combine the olive oil and smashed garlic cloves. Cook, stirring occasionally, until the garlic is fragrant and just beginning to brown, about 2 to 3 minutes.

  2. 2

Carefully add the hand-crushed tomatoes and their juices to the skillet. Season with salt.

  3. 3

Increase the heat to medium-high and bring the sauce to a simmer. Cook, stirring occasionally, until the sauce has thickened slightly and the flavors have melded, about 10 to 12 minutes.

  4. 4

Remove the skillet from the heat. Stir in the butter pieces, tossing or whisking constantly until the butter is melted and the sauce is glossy and emulsified.

  5. 5

Add 1 pound of cooked, drained pasta directly to the skillet. Toss for 1 to 2 minutes over low heat to ensure the sauce thoroughly coats the pasta before serving.

Notes

The recipe yields enough sauce to coat 1 pound of pasta. Using butter instead of just oil helps bind the sauce to the pasta more effectively.
