Ingredients
- 110 g unsalted butter (for the cookie base)
- 80 g granulated sugar
- 80 g brown sugar
- 3 g coffee powder (dissolved in 10g hot water)
- 1 egg
- 5 g vanilla extract
- 200 g all purpose flour
- 2 g baking soda
- 1 g baking powder
- 2 g salt
- 75 g salted butter (cut into cubes, for filling)
- 20 g unsalted butter (for coffee bits)
- 30 g all purpose flour (for coffee bits)
- 20 g sugar (for coffee bits)
- 6 g coffee powder (dissolved in 10g hot water, for coffee bits)

In a large mixing bowl, cream together 110g unsalted butter, 80g granulated sugar, and 80g brown sugar until light and fluffy.

Dissolve 3g coffee powder in 10g hot water. Add the coffee mixture, 1 egg, and 5g vanilla extract to the butter mixture and mix until well combined.

Fold in 200g all purpose flour, 2g baking soda, 1g baking powder, and 2g salt until a dough forms.

Chill the cookie dough in the refrigerator for at least 30 minutes to make it easier to handle.

While the dough is chilling, prepare the coffee bits (craquelin paste) by mixing 20g unsalted butter, 30g all purpose flour, 20g sugar, and 6g coffee powder (dissolved in 10g hot water) until a smooth paste forms.

Preheat your oven to 190°C (375°F).

Divide the chilled cookie dough into approximately 15 equal portions. Take a cube of the 75g salted butter and wrap the dough around it, sealing it completely to form a ball.

Place the dough balls on a baking sheet and flatten them slightly. Spread a small amount of the coffee paste on top of each cookie.

Bake the cookies for 12-15 minutes. Halfway through the baking time, use a large ring cutter to scoot around each cookie to ensure a perfectly round shape.

Remove from the oven and, if desired, finish with a sprinkle of flaky salt while still warm.
Notes
For a better, rounder cookie, use a big ring cutter to shape it halfway through the bake. Chilling the dough is essential for wrapping the butter center without it melting too quickly.
