Joppiesauce – Original Dutch Sauce for Fries
A creamy, spicy Dutch sauce made with mayonnaise, ketchup, shallot, and curry. It comes together in about 5 minutes and pairs especially well with fries, fish, grilled dishes, and fried snacks.

Ingredients
- 1 Shallot (peeled and extremely finely diced or grated)
- 8 EL Mayonnaise
- 4 TL Ketchup
- 1 TL Curry powder
- 1 EL Hot paprika powder
- 1 Prise Cayenne pepper (to taste)
- Salt (a pinch or to taste)
- Pepper (to taste)

Peel the shallot and dice it extremely finely with a sharp knife, or grate it finely. For an especially smooth sauce, process the shallot as finely as possible.

Place the shallot in a bowl and add the mayonnaise, ketchup, and curry powder.

Stir everything thoroughly until a smooth, uniform sauce forms and the shallot pieces are evenly distributed.

Add the paprika powder, pepper, cayenne pepper, and a pinch of salt. Season to taste, adding the cayenne pepper and salt particularly carefully.

Stir the sauce thoroughly again so that the spices are evenly distributed. Serve the Joppiesauce immediately, or transfer it to a clean, sealable jar and let the flavors develop in the refrigerator.
Notes
Joppiesauce pairs well with fries, bitterballen, other fried snacks, fish, and grilled foods. Stored airtight in the refrigerator, it keeps for up to one week. For a vegan version, use plant-based mayonnaise.
