Tender and juicy chicken thighs marinated with ginger, green onions, soy sauce, and peanut oil, then cooked in a rice cooker. Soaking them in salt, vinegar, and water helps eliminate the strong odor before cooking.

Weights are estimates. Together, the ingredients weigh about 40 g before cooking, which is about 10 g per serving.
Steps
Place the chicken thighs in a bowl. Add salt, white vinegar, and enough water to cover them.
Soak the thighs for 20 minutes to help remove the blood and strong odor.
Rinse the chicken thighs thoroughly with clean water.
Pour boiling water over the chicken to help firm up the skin.
Pat the thighs very dry with paper towels.
Add the sliced ginger and chopped green onions to the chicken.
Add 1 tbsp light soy sauce, 1/2 tbsp dark soy sauce, and 1 tbsp peanut oil.
Mix well to coat the chicken with the marinade and let it rest for 30 minutes.
Lightly grease the inside of a rice cooker with oil.
Place some of the ginger and green onions in the bottom of the rice cooker.
Place the chicken thighs on top of the aromatics.
Pour the remaining marinade over the chicken.
Cover the rice cooker and cook for 30 minutes, until the chicken is juicy and tender and the skin is well seasoned.
Serve the chicken thighs hot.
Notes
The quantities of chicken thighs, salt, vinegar, water, ginger, green onions, and oil for greasing are not specified in the source. The transcript indicates cooking in a rice cooker for 30 minutes, but does not provide an internal temperature check; verify that the chicken is fully cooked before serving.
