Crispy and Cheesy Caesar Chicken Taco
A high-protein taco that uses a crispy cheese crust instead of a tortilla, filled with seasoned chicken and a fresh Caesar salad.

Ingredients
- 4 oz low-fat mozzarella cheese (finely shredded)
- 1 oz parmesan cheese (shredded)
- 1 tbsp SpiceX Daily Blend seasoning mix (or all-purpose seasoning of your choice)
- 8 oz boneless, skinless chicken breast (cooked and shredded or chopped)
- 1 cup romaine lettuce (chopped)
- 1 cup spinach (fresh)
- 2 tbsp yogurt Caesar dressing (Bolthouse brand recommended)
- bacon bits (optional, to taste)

In a small bowl, combine the shredded mozzarella cheese, parmesan cheese, and SpiceX Daily Blend seasoning mix until well combined.

Heat a non-stick skillet over medium heat. Spread half of the cheese mixture in the skillet in a circle to create the taco base.

Place the cooked chicken breast over the cheese layer in the skillet.

Cover the chicken with the remaining cheese mixture.

Cook (or bake if using a tray) until the cheese is golden, bubbling, and crispy around the edges.

While the cheese is cooking, prepare the salad by mixing the romaine lettuce, spinach, yogurt Caesar dressing, and bacon bits (if using) in a bowl.

Carefully remove the cheese and chicken crust from the skillet. While still hot, carefully fold it into a taco shape.

Fill the crispy cheese taco with the prepared Caesar salad and serve immediately.
Notes
This recipe is extremely high in protein (approx. 91g) and low in carbs by substituting the tortilla with a cheese crust. The cooking time is very fast, ideal for a 10-minute meal.
