Ingredients
- 6 eggs (for the sponge cake)
- 200 g sugar (for the sponge cake)
- 200 g flour (sifted)
- 1 tsp vanilla essence
- 1 tsp baking powder
- 395 g condensed milk (1 large can)
- 410 g evaporated milk (1 large can)
- 400 g heavy cream (1 large can)
- 3 egg whites (for the meringue)
- 1 cup sugar (for the meringue, to taste)
Steps
- 1
Preheat the oven to 200 ºC before starting with the batter.
- 2
In a large bowl, beat the 6 eggs until they reach a frothy texture.
- 3
Gradually add the 200 g of sugar to the eggs while continuing to beat until the mixture triples in volume.
- 4
Fold in the sifted flour along with the baking powder using gentle folding motions. It is recommended to add it gradually to facilitate integration.
- 5
Add the vanilla essence to the mixture and finish integrating gently.
- 6
Grease a baking pan with butter and flour, and pour the batter into it.
- 7
Bake the sponge cake for 25-30 minutes. Check for doneness by piercing the center with a toothpick; if it comes out clean, it's ready.
- 8
Remove the cake from the oven and let it cool completely.
- 9
While the cake is baking or cooling, prepare the cream by mixing the condensed milk, evaporated milk, and heavy cream in a blender or with an electric mixer.
- 10
For the meringue, beat the 3 egg whites until stiff peaks form.
- 11
Gradually add the cup of sugar to the egg whites while beating until you reach a firm and glossy consistency.
- 12
Pour the three-milk mixture over the cold cake (you can prick it with a fork beforehand for better absorption) and let it rest for about an hour until completely soaked.
- 13
Cover the top of the cake with the meringue, using a spatula or piping bag to decorate to taste.
- 14
Optionally, decorate with dusted cinnamon, caramel drizzle, cherries, or raspberries before serving.
Notes
It is essential to let the cake soak well (minimum one hour) to obtain the characteristic texture. You can decorate with fresh fruits like strawberries or cherries to contrast the sweetness.
