Ingredients
- 350 g Semisweet chocolate
- 120 g Sugar
- 250 g Heavy cream (Used hot)
- 10 g Strong instant coffee (Extra-strong instant coffee may be used)
- 100 g Butter (Chilled, to create a thermal shock)
- 100 g Whipped cream or heavy cream (Chilled; the author presents both options)
Steps
- 1
Place the sugar in a preheated saucepan. Stir constantly as it begins to melt, until completely dissolved and caramelized in appearance.
- 2
Pour the hot heavy cream over the dissolved sugar. Stir thoroughly to combine.
- 3
Add the strong or extra-strong instant coffee and mix well.
- 4
Once the mixture is completely smooth, add the semisweet chocolate. Stir thoroughly until you obtain a uniform, smooth cream.
- 5
Turn off the heat and let the mixture rest separately for a few moments, just until it loses some of its heat.
- 6
Add the chilled butter and mix. The butter should be chilled to create a thermal shock.
- 7
Set the mixture aside until it cools a little more.
- 8
Add the chilled whipped cream or heavy cream and beat until incorporated and firm and creamy. The author notes that, for a lighter color, you can continue beating.
- 9
Transfer the filling to a dish and cover with plastic wrap directly touching the surface.
- 10
Refrigerate or leave at room temperature before using, as indicated in the video.
Notes
The video does not provide exact cooling times or specify the temperature of the saucepan or cream; allow the mixture to cool as described before adding the whipped cream or heavy cream. The recipe is presented as a filling for desserts, but the video does not specify a yield in grams or how many cakes it can fill.
