Cheese Bread Sticks
Crispy on the outside and soft on the inside, made with sour and sweet tapioca starch, Minas cheese, and Parmesan. The dough is scalded with a hot mixture of milk, water, and oil before being shaped and baked.

Ingredients
- 800 g Sour tapioca starch
- 350 g Sweet tapioca starch
- 2 tbsp Salt (Heaping tablespoons; approximately 30 g.)
- 300 ml Milk
- 300 ml Water
- 300 ml Oil (Used in the mixture to scald the tapioca starch.)
- 50 g Grated Parmesan cheese
- 350 g Minas cheese
- 6 Eggs (Add only after the scalded dough has cooled so the eggs do not cook.)

Preheat the oven to 180 °C. Grease one or more baking sheets and set them aside.

Place the water, milk, and oil in a saucepan. Heat until the mixture begins to bubble.

While the liquid mixture heats, place the sour tapioca starch, sweet tapioca starch, and salt in a large bowl. Mix the dry ingredients well.

As soon as the water, milk, and oil mixture begins to boil, pour it over the tapioca starches to scald them.

Immediately mix with a spoon or spatula, gradually incorporating the liquid and handling the dough carefully, as it will be very hot.

When the dough is cool enough to touch, mix in the eggs, adding them to the dough and incorporating them completely until you obtain a smooth, soft mixture.

Add the Minas cheese and Parmesan. Mix until the cheeses are evenly distributed throughout the dough. The dough should remain soft; this is the expected consistency.

Transfer the dough to a piping bag. On the greased baking sheet, pipe long strips to form the sticks, leaving some space between them.

Place in the preheated oven at 180 °C and bake for approximately 20 to 25 minutes, or until the sticks have risen and are lightly golden.

Remove from the oven and serve the sticks while still warm, preferably with coffee.
Notes
This recipe makes a large batch and can be adjusted as needed. Handle the dough carefully immediately after scalding it; add the eggs only once it has cooled to prevent them from cooking.
