Ingredients

  • 450 g bread flour
  • 260 g whole milk (warm)
  • 58 g unsalted butter (softened)
  • 12 g granulated sugar
  • 7 g active dry yeast
  • 5 g salt
  • 3 g garlic powder
  • 113 g unsalted butter (softened)
  • 227 g mozzarella cheese
  • 30 g Parmesan cheese
  • 22 g garlic (minced)
  • 6 g parsley (chopped)
  • 2 g garlic powder
  • 1 g salt
  • 58 g unsalted butter (melted)
  • 6 g parsley
  • 2 g garlic powder
  • salt (to taste)

Steps

    In a large bowl or the bowl of a stand mixer, combine the warm milk, sugar, and active dry yeast. Let it sit for about 5-10 minutes until foamy.

    Add the bread flour, salt, garlic powder, and softened butter to the yeast mixture.

    Knead the dough using a stand mixer with a dough hook or by hand on a floured surface for about 8-10 minutes until the dough is smooth and elastic.

    Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.

    While the dough rises, prepare the filling by mixing the softened butter, minced garlic, chopped parsley, garlic powder, and salt in a small bowl until well combined.

    Punch down the risen dough and roll it out on a floured surface into a large rectangle, approximately 1/4 inch thick.

    Spread the prepared garlic butter filling evenly over the surface of the dough.

    Sprinkle the shredded mozzarella and Parmesan cheese evenly over the butter layer.

    Cut the dough into equal-sized squares (about 3-4 inches). Stack the squares on top of each other and place them sideways into a greased loaf pan.

    Cover the loaf pan and let the dough rise again for another 30-45 minutes.

    Bake the bread for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.

Notes

Ensure the milk is warm (about 110°F) but not hot, as hot milk will kill the yeast. For the best pull-apart effect, don't pack the dough squares too tightly in the loaf pan.
