Weights are estimates. Together, the ingredients weigh about 495 g before cooking, which is about 125 g per serving.

Steps

  1. Pre-butter four 8-ounce ramekins. The creator describes rubbing butter around the inside of each ramekin.

  2. Mix equal amounts of Dutch-process or black cocoa powder and sugar for dusting the ramekins. Add the mixture to the ramekins and swirl to coat the interiors; the creator coats them generously.

  3. Put the eggs and egg yolks in a bowl. Add the ¼ cup sugar.

  4. Beat the egg mixture on medium-high until it turns light yellow. Set it aside.

  5. Place the chocolate chips and sliced butter in a microwave-safe bowl. Microwave in 30-second increments until nearly melted, stirring to melt the remaining pieces.

  6. Add the melted chocolate mixture to the eggs gradually, stirring so the eggs do not scramble.

  7. Add the salt, tablespoon of black cocoa, and flour. Stir everything together until combined.

  8. Fill the prepared ramekins about three-quarters full with the batter.

  9. Drop a ganache ball into the center of each cake. It is acceptable if it protrudes slightly from the top.

  10. Bake at 450°F (230 °C) (232°C (450 °F)) for about 15 minutes.

  11. Carefully invert the ramekins to release the cakes, giving them a couple of firm taps. The ramekins will be very hot.

  12. Dust the tops with powdered sugar, using a small sifter.

  13. Serve with a scoop of vanilla bean ice cream, if desired.

Notes

The transcript does not explain how to make or source the ganache balls, and it gives no quantity for them; that filling detail is missing from the source. The amount of cocoa-sugar dusting mixture, powdered sugar, and serving ice cream is also unspecified. Use only microwave-safe bowls.
