Ingredients

  • 1360 g boneless skinless chicken thighs (48 oz)
  • 75 g soy sauce (5 Tbsp)
  • 30 g dark soy sauce (2 Tbsp)
  • 80 g honey (4 Tbsp)
  • 60 g mirin (4 Tbsp)
  • 30 g ginger paste (2 Tbsp)
  • 15 g garlic paste (1 Tbsp)
  • 3 tbsp cornstarch (for slurry)
  • 4 tbsp cold water (for slurry)
  • 480 g short grain or sushi rice (dry weight, about 2.5 cups)
  • 100 g low-fat mayo (1/2 cup)
  • 100 g 0% greek yogurt (1/2 cup)
  • 75 g sriracha (5 Tbsp)
  • salt, pepper, garlic powder (to taste)
  • milk (as needed for desired consistency)
  • 2 green onions (stalks, chopped)

Steps

    Place the boneless skinless chicken thighs into the slow cooker.

    Add the soy sauce, dark soy sauce, honey, mirin, ginger paste, and garlic paste to the slow cooker.

    Cover and cook on High for 4-5 hours or on Low for 5+ hours until the chicken is cooked through and tender.

    While the chicken is cooking, prepare the rice according to package instructions.

    Prepare the yum yum sauce by mixing the low-fat mayo, 0% Greek yogurt, sriracha, salt, pepper, and garlic powder in a bowl. Add milk as needed to reach your desired consistency.

    Once the chicken is done, prepare the cornstarch slurry by mixing 3 Tbsp cornstarch with 4 Tbsp cold water in a small bowl until smooth.

    Pour the slurry into the slow cooker, stir to combine, and let it sit uncovered for 15-20 minutes to allow the sauce to thicken.

    Shred or chop the chicken and mix it with the cooked rice directly in the slow cooker to allow the rice to soak up the sauce, or keep them separate if preferred.

Notes
