Ingredients

  • 4 Salmon fillets (pat dry)
  • 2 tbsp Olive oil (for cooking salmon)
  • 2 tbsp Butter (for cooking salmon)
  • Salt and black pepper (to taste, for salmon seasoning)
  • 1 tsp Paprika (for salmon seasoning)
  • 0.5 tsp Garlic powder (for salmon seasoning)
  • 0.5 tsp Onion powder (for salmon seasoning)
  • 1 tsp Dried parsley (for salmon seasoning)
  • 1 tsp Lemon zest (for salmon seasoning)
  • 0.5 tsp Thyme (for salmon seasoning)
  • 0.5 tsp All purpose seasoning (for salmon seasoning)
  • 1 lb Pasta (fettuccine, linguine, or tagliatelle)
  • Salt (for the pasta water)
  • 1 tbsp Butter (for sauce)
  • 1 tbsp Olive oil (for sauce)
  • 4 Garlic (cloves, minced)
  • 1 Onion (medium, finely diced)
  • 250 ml Heavy cream
  • 60 g Grated Parmesan
  • 1 Lemon zest (zest of 1 lemon)
  • 0.5 Lemon juice (juice of 1/2 to 1 lemon, to taste)
  • 2 tbsp Fresh parsley (chopped)
  • Salt and freshly ground black pepper (to taste, for sauce)
  • Sauce Seasonings (Paprika, oregano, chili flakes, all purpose seasoning, onion powder (to taste))

Steps

    Bring a large pot of salted water to a boil.

    Cook the pasta (fettuccine, linguine, or tagliatelle) until al dente according to the package instructions.

    Reserve 120 ml (1/2 cup) of the pasta water before draining the pasta.

    Pat the salmon fillets dry with paper towels.

  5. 5

    Drizzle the salmon with oil and season with salt, black pepper, paprika, garlic powder, onion powder, dried parsley, lemon zest, thyme, and all purpose seasoning.

    Heat 2 tbsp olive oil and 2 tbsp butter in a large frying pan over medium-high heat.

    Place salmon in the pan and cook for 3–4 minutes per side until golden and just cooked through, basting with the butter in the pan as it cooks.

    Transfer the cooked salmon to a plate and set aside.

    Reduce the heat to medium and melt 1 tbsp butter with a drizzle of olive oil in the same pan used for the salmon.

    Add the finely diced onion and minced garlic to the pan; cook for 30–60 seconds until fragrant.

    Pour in 250 ml (1 cup) of heavy cream and simmer gently for 2–3 minutes.

    Add the sauce seasonings (paprika, oregano, chili flakes, all purpose seasoning, onion powder), lemon zest, and lemon juice to the cream mixture.

    Stir in the grated Parmesan cheese and fresh parsley until the cheese has melted and the sauce is smooth.

    Add the cooked pasta to the sauce and toss until evenly coated.

    If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.

    Taste and adjust the seasoning with salt, pepper, or more lemon juice if a brighter flavor is desired.

    Serve the pasta topped with the cooked salmon fillets.

Notes

Adjust all seasonings to your preference. You can serve the salmon fillets whole on top of the pasta or flake them into the sauce before serving.
