Ingredients

  • 500 g Ground beef
  • 1 Small onion (Finely chopped)
  • 1 Garlic clove (Minced or grated)
  • Fresh parsley (A handful, chopped)
  • 3 tbsp BBQ sauce (The letter C in the post is interpreted as tablespoons)
  • Smoked paprika (To taste)
  • 1 paquete Flour tortillas (Enough for approximately 10 tortillas)
  • 4 Cheddar cheese slices
  • Grated mozzarella cheese (A handful; can be substituted with another cheese)
  • Milk (A splash, approximately 30 ml, to thin the sauce)
  • 1 tbsp Vegetable oil (For cooking the meat; estimated amount because it does not appear in the post)

    Finely chop the onion, garlic, and parsley. Have the tortillas and cheeses ready before assembling.

    Heat the oil in a large skillet over medium heat. Add the onion and cook for 3 to 4 minutes, until translucent and lightly browned.

    Add the garlic and cook for 30 seconds, just until fragrant.

    Add the ground beef and break it up with a spoon. Cook for 7 to 10 minutes, stirring, until no longer pink and completely cooked through.

    Add the parsley, BBQ sauce, and smoked paprika. Mix well and cook for 1 to 2 minutes more, until the filling is flavorful and slightly moist but not runny.

    Place a portion of the meat filling along the edge of each tortilla. Roll tightly, folding the sides inward so the filling does not escape, and form 10 rolls.

    Place the rolls seam-side down in a clean skillet or baking dish. Brown them over medium heat, turning them so they become crisp on all sides, or bake at 200 °C for 8 to 10 minutes.

    To prepare the sauce, place the cheddar, mozzarella, and milk in a small saucepan over low heat. Stir constantly until the cheeses melt and the mixture is smooth and creamy; do not let it boil.
