Mango Pineapple Lemonade

Ingredients
- 1 cup sugar
- 1 cup water (for simple syrup)
- 2 lemon peels (from two lemons)
- 1 pineapple (diced; reserve 1/2 to add to drink)
- 1 cup lemon juice (freshly squeezed, about 6-8 lemons)
- 2 mangoes (diced)
- 2 cup cold water (for blending)

In a medium saucepan, combine 1 cup sugar, 1 cup water, and the lemon peels.

Stir the mixture until the sugar dissolves, then turn on low heat and simmer for 5 minutes.

Remove the saucepan from the heat and let the syrup steep for 15 minutes to infuse the lemon flavor.

In a blender, combine the diced mango, 2 cups of cold water, and half of the diced pineapple chunks.

Blend the fruit and water mixture until completely smooth.

In a large pitcher, combine the prepared mango-pineapple puree, 1 cup of lemon juice, and the strained simple syrup.

Stir the mixture well to combine.

Stir in an additional 2–3 cups of cold water (or sparkling water if preferred) to dilute the lemonade to your desired strength and sweetness.

Taste the lemonade and adjust as needed, adding more lemon juice for tartness or more syrup for sweetness.

Add ice cubes and the reserved pineapple chunks to the pitcher or individual glasses before serving.
Notes
You can substitute the still water with sparkling water for a fizzy version. Adjust the final water amount based on how concentrated you prefer your fruit drinks.
