Ingredients
Weights are estimates. Together, the ingredients weigh about 675 g before cooking, which is about 170 g per serving.
Steps
Bring a large pot of water to a boil and season it generously with kosher salt.
Add the spaghetti and cook according to the package instructions, or until al dente, about 7 minutes. Do not drain it; reserve the cooking water in the pot.
While the pasta boils, place half of the cubed butter in a large saucepan over medium-low heat. Once it is slightly melted, turn off the heat and wait for the pasta to finish cooking.
Using tongs, transfer the cooked spaghetti directly from the pot into the saucepan with the melted butter. A little pasta water will come along; it helps emulsify the sauce.
Add the remaining butter. Toss the pasta constantly, adding pasta water one tablespoon at a time until the sauce is fully emulsified, slightly thickened, and clings to the noodles.
Season with kosher salt to taste, then toss again so the pasta is evenly coated.
Serve. If desired, finish with flaky salt and freshly cracked black pepper, taking care not to oversalt.
Notes
The structured ingredient list specifies spaghetti, while the instructions call the pasta bucatini. The recipe page and structured data otherwise agree on the buttered-noodle method; the listed ingredient is preserved as spaghetti. Pasta water is added a tablespoon at a time as needed; no total amount is specified.
