Weights are estimates. Together, the ingredients weigh about 1.53 kg before cooking, which is about 190 g per serving.

Steps

  1. Mix the bread flour, brown sugar, yeast, salt, warm water, and oil until a shaggy dough forms.

  2. Lightly flour your hands and knead the dough: fold the side farthest from you over, then press forward with the heel of your hand. Continue until the dough is smooth and forms a ball.

  3. Spray a bowl with oil. Put the dough in top-side down, then flip it over so it is lightly coated with oil.

  4. Cover the bowl lightly with plastic wrap and let the dough rise for 1–2 hours, until doubled in size.

  5. Once doubled, turn the dough out onto a clean surface without punching it down. Cut off pieces and roll them out into ropes.

  6. Shape each rope into a pretzel: set the middle down, cross the ends over one another, and stick the ends down.

  7. Prepare the baking soda bath by combining 2 cups of water and ⅛ cup baking soda.

  8. Line a baking sheet with parchment paper.

  9. Dip each pretzel in the baking soda bath, shake or remove excess liquid, and transfer it to the prepared baking sheet.

  10. Scramble the egg and brush it over the pretzels.

  11. Bake at 450°F (230 °C) (232°C (450 °F)) for 10 minutes. The transcript first says 15 minutes, then corrects that to 10 minutes.

  12. Brush the baked pretzels with melted butter.

  13. Shake cinnamon sugar over the buttered pretzels, then add a quick shake of salt. Serve and enjoy.

Notes

The transcript gives a corrected baking time of 10 minutes at 450°F; it initially says 15 minutes, then explicitly corrects itself. Amounts for butter and the cinnamon-sugar coating are not stated. The transcript does not specify the number or size of pretzels.
