Chicken wings are rinsed, lightly cleaned with flour, cut to help the marinade penetrate, and marinated with Chinese-style seasonings. They are coated generously in cornstarch and pan-fried until crunchy outside while remaining juicy and tender inside.

Weights are estimates. Together, the ingredients weigh about 1.23 kg before cooking, which is about 305 g per serving.

Steps

  1. Place the chicken wings in a bowl. Add the flour and rub it thoroughly over the wings.

  2. Add water to the bowl and soak the wings for about 10 minutes.

  3. Rinse the wings two or three times, then pat them completely dry.

  4. Make a small cut in the middle of each wing so the seasoning can soak in without drying out the meat.

  5. Add the green onion, ginger, light soy sauce, sugar, oyster sauce, blue fish sauce, pepper, and rice wine to the wings.

  6. Mix thoroughly so the seasonings coat the wings, then marinate for about 40 minutes.

  7. Coat each wing generously with cornstarch, pressing the coating firmly onto the surface so it sticks.

  8. Heat the oil in a pan over medium-low heat.

  9. Add the coated wings to the pan and fry for about 10 minutes, turning them during cooking so both sides become golden and crispy.

  10. When the wings are cooked through, remove them from the pan and serve hot. The coating should be crunchy while the inside remains juicy and tender.

Notes

The source does not provide exact ingredient quantities, pan size, oil depth, or a specific internal temperature; the listed amounts are practical estimates and should be adjusted to taste. The identity of “blue fish sauce” is unclear in the transcript and should be verified before preparing the recipe.
