A spicy, savory Korean-Chinese-inspired stew combining the flavors of mapo tofu and soft tofu stew. Extra-lean pork, silken tofu, zucchini, enoki mushrooms, doubanjiang, and gochugaru create a high-protein, deeply seasoned soup served with fluffy rice.

Steps
Heat a large pot over medium-high heat and add the sesame oil.
Add the extra-lean pork mince. Sauté it, breaking it up with a spoon, until browned.
Reduce the heat to medium. Add the doubanjiang and sauté thoroughly with the pork.
Add the soy sauce, oyster sauce, five-spice powder, crushed Sichuan peppercorns, beef stock powder, and gochugaru. Stir to distribute the seasonings through the pork.
Pour in 3–4 cups of rice water, using more for a soupier stew. Bring the mixture to a simmer.
Once simmering, add the cubed silken tofu and zucchini.
Simmer for 5 minutes.
Top the stew with the enoki mushrooms and cook for another 1–2 minutes.
Serve with fluffy rice.
