Ingredients

  • 1 apple (Preferably Elstar; peeled and cut into small pieces)
  • 1 zakje vanilla sugar (Can be replaced with 1 tbsp granulated sugar)
  • cinnamon (A pinch; speculaas or cookie spices can also be used. Extra to taste for serving)
  • salt (A small pinch)
  • 3 eetlepels granulated sugar (Brown sugar can also be used)
  • 5 eetlepels flour (Almond flour or spelt flour can also be used; add a little extra if the crumble mixture becomes too wet)
  • 50 g butter (At room temperature)
  • Greek yogurt (To taste, for serving)

Steps

  1. 1

Preheat the oven to 200 °C.

  2. 2

Peel the apple and cut it into small pieces. Place the pieces in an ovenproof dish.

  3. 3

Add the vanilla sugar and a pinch of cinnamon—or speculaas or cookie spices—to the apple and mix everything together.

  4. 4

Place the butter, flour, granulated sugar, and a small pinch of salt in another bowl.

  5. 5

Mash the mixture with a fork, or briefly knead it by hand, until a crumble mixture forms. If the butter combines into one large ball from the warmth of your hands, add a little extra flour and continue mixing with a fork.

  6. 6

Distribute the crumble evenly over the apple pieces in the ovenproof dish.

  7. 7

Bake the apple crumble for 25–30 minutes in the preheated oven.

  8. 8

Meanwhile, spoon Greek yogurt into a bowl.

  9. 9

Spoon the still-warm apple crumble over the yogurt.

  10. 10

Optionally sprinkle with a little more cinnamon or speculaas or cookie spices, and serve immediately.

Notes

Double the quantities for more people. For a dessert, the yogurt can be replaced with or accompanied by a scoop of vanilla ice cream. For a snack, the yogurt can be omitted. Suggested variations include spiced nuts, salted caramel sauce, berries, or plums; these are not included in the basic recipe.
