Ingredients

  • 8 oz Kettle-cooked potato chips (one standard bag, plain)
  • 1 tsp Smoked paprika (estimated for spice blend)
  • 0.5 tsp Garlic powder (estimated for spice blend)
  • 0.5 tsp Onion powder (estimated for spice blend)
  • 0.25 tsp Cayenne pepper (adjust for heat level)
  • 0.25 tsp Dried oregano (estimated for spice blend)
  • 0.25 tsp Dried thyme (estimated for spice blend)
  • 0.5 tsp Salt (to taste)
  • 0.25 tsp Black pepper (to taste)

Steps

  1. 1

Preheat your oven to 350°F (175°C).

  2. 2

Spread the regular kettle chips out in a single layer on a large baking sheet.

  3. 3

Place the chips in the oven and heat them for about 5 minutes until they are warm and slightly fragrant.

  4. 4

While the chips are heating, combine the smoked paprika, garlic powder, onion powder, cayenne pepper, dried oregano, dried thyme, salt, and black pepper in a small bowl. Mix thoroughly to create the Cajun spice blend.

  5. 5

Remove the warm chips from the oven and sprinkle the spice mixture evenly over them while they are still hot.

  6. 6

Carefully transfer the seasoned chips back into the original potato chip bag or a large bowl.

  7. 7

Close the bag and shake it gently to ensure all the chips are thoroughly and evenly coated with the spices.

  8. 8

    Serve immediately while still warm.

Notes

Heating the chips in the oven is the key step—it releases the oils on the surface of the chips, which allows the dry spices to stick much better than they would on cold chips. You can adjust the cayenne pepper to your preferred spice level.
