How to Make ZUCCHINI FRITTERS Like an Italian

Ingredients
- 5 Zucchini (freshly grated)
- Cooking salt (for drawing out moisture and seasoning)
- 5 Eggs (whisked)
- Pepper (a sprinkle)
- 3 tbsp Self-raising flour (heaped tablespoons)
- 2 tbsp Plain flour (heaped tablespoons)
- 5 tbsp Pecorino cheese (freshly grated)
- Olive Oil (for frying)
Steps

Prepare the zucchini by freshly grating them into a bowl.

Add a sprinkle of cooking salt to the grated zucchini and leave to rest for 10 minutes to draw out moisture.

Scoop out handfuls of the zucchini mixture at a time, squeezing them firmly between both hands until all the excess water is removed.

Transfer the squeezed zucchini into a separate, clean bowl.

In a medium-sized bowl, crack five eggs and whisk them well.

Add salt and pepper to the eggs and mix again.

Add 3 heaped tablespoons of self-raising flour and 2 heaped tablespoons of plain flour to the egg mixture.

Add 5 tablespoons of freshly grated Pecorino cheese to the flour and egg mixture and mix through well.

Combine the egg and flour mixture into the bowl with the squeezed zucchini and mix until thoroughly combined.

Heat olive oil in a medium pan. Once hot, turn the heat down slightly to ensure the oil doesn't burn the fritters.

Using a tablespoon, scoop out a heap of the mixture and gently drop it into the pan with the hot oil.

Cook each side of the zucchini fritters for just over a minute, or until they are golden brown.

Remove each fritter once cooked and transfer to a plate lined with paper towels to soak up any excess oil.

Serve warm with an optional extra sprinkle of freshly grated Pecorino cheese.
Notes
Vincenzo's Top Tips: If the fritters are turning brown too quickly, turn the heat down immediately. Ensure you squeeze as much water as possible out of the zucchini to prevent soggy fritters. The small amount of self-raising flour provides a lovely fluffy texture.
