Ingredients

  • 1.5 lb ground beef (or turkey)
  • 1 onion (medium, diced)
  • 6 cloves garlic (minced)
  • 1 bell pepper (red or green, diced)
  • 2 jalapeños (diced)
  • 1 can fire roasted diced tomatoes (14.5 oz can)
  • 1 can crushed tomatoes (28 oz can)
  • 1 can kidney beans (drained and rinsed, 15 oz can)
  • 1 can black beans (drained and rinsed, 15 oz can)
  • 2 tbsp tomato paste
  • 1.5 cup beef broth
  • 2 tbsp chili powder (divided)
  • 2 tbsp garlic powder (divided)
  • 2 tbsp onion powder (divided)
  • 1 tbsp chipotle powder (divided; add more or less for desired spice level)
  • 0.5 tbsp cumin (divided)
  • 0.5 tbsp oregano (divided)
  • 1.5 tbsp sugar
  • 1 tsp coriander (divided)
  • salt and pepper (to taste)
  • 2 tbsp olive oil (for cooking)

Steps

    In a large pot or Dutch oven, heat 1-2 tablespoons of olive oil over medium heat.

    Add the ground beef and cook until browned, about 5-7 minutes.

    Add the spices (chili powder, garlic powder, onion powder, chipotle powder, cumin, oregano, coriander, and sugar) and mix until well combined. Remove the meat from the pot and set aside.

    Add the diced onion, jalapeños, and bell pepper to the pot. Cook until the vegetables are softened, about 5 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

    Add the cooked meat back into the pot and stir until combined.

    Add the tomato paste, stir until evenly combined, and cook for 3-5 minutes.

    Add the fire-roasted diced tomatoes and crushed tomatoes, then stir.

    Add the drained kidney beans and black beans, mix until combined, and add more of the same spices to taste.

    Pour in the beef broth and bring the mixture to a simmer.

    Once simmering, reduce the heat to low.

    Cover the pot and let the chili simmer for 45-120 minutes, stirring occasionally. The author recommends 2 hours for best flavor.

    Remove the lid and allow to simmer uncovered for 10-15 minutes to thicken.

    After simmering, taste the chili and adjust seasoning with more salt, pepper, or spices if desired.

Notes

The author recommends simmering for the full 2 hours for the best flavor development. You can substitute ground turkey for the beef for a leaner option.
