Ingredients

  • 2 lb slender carrots (Prefer young carrots sold in bunches; trim and scrub. Halve lengthwise if 1 inch or thicker at the top.)

    Heat the oven to 425°F (220°C). Arrange a rack in the middle position. Trim and scrub the carrots; halve any carrots that are about 1 inch or thicker at the top so they cook through evenly.
