- 1 tbsp Chia Seeds
- 0.25 tsp Cinnamon
- 1 tbsp Maple Syrup
- 0.5 tsp Vanilla Extract
- 1 tbsp Peanut Butter (or plant-based yogurt or almond butter; up to 2 tablespoons)
- 0.75 cup Water
- 0.5 cup Berries (for serving)
- 1 tsp Maple Syrup (extra for serving)
- 1 tsp Peanut butter (extra for serving)
Steps
- 1
In a medium mixing bowl or glass mason jar, combine the old-fashioned oats, chia seeds, and cinnamon.
- 2
In a separate small bowl, stir together the maple syrup, vanilla extract, and peanut butter until the mixture is smooth and runny.
- 3
Add the peanut butter mixture and the water to the oat mixture.
- 4
Stir well to bring all ingredients together until no lumps of nut butter remain.
- 5
Cover the bowl or jar with foil or a lid and place it in the fridge for 5 minutes.
- 6
After 5 minutes, stir the mixture again for about 20 seconds to incorporate any water that may have settled on top and ensure an even consistency.
- 7
Close the jar tightly and refrigerate overnight.
- 8
The next day, serve the oats plain or top with fresh berries, additional peanut butter, plant-based yogurt, or chocolate chips.
