  • 0.25 cup pine nuts (toasted and cooled)

Steps

    Toast the pine nuts in a dry skillet over medium heat, stirring frequently, until lightly golden and fragrant, about 3 to 5 minutes. Transfer them to a plate and let them cool so they do not wilt the greens.

    In a large bowl—the bowl should be large enough to hold all the salad and leave room for tossing—combine the minced garlic, chopped anchovies, and fresh lemon juice. Mash and whisk until the anchovies are mostly broken down.

    While whisking continuously, slowly stream in the extra-virgin olive oil to form a cohesive vinaigrette. Season lightly with black pepper and, if needed, a small amount of salt.

    Add the sliced radicchio, fennel, and arugula directly to the large bowl with the vinaigrette. Add the fennel fronds if using.
