Homemade Oriental Rice with Shrimp, Chicken, and Pork

Ingredients

  • 1.5 cup White rice (toasted before cooking)
  • 2 cup Water (for cooking the rice)
  • 0.5 lb Chicken breast (cut into small cubes)
  • 0.5 lb Pork (cut into small cubes)
  • 0.5 lb Shrimp (small, whole, and cleaned)
  • 100 g Ham (pork or turkey, diced)
  • 4 Eggs (beaten)
  • 3 Green onion stalks (chopped)
  • 1 tallo Celery (chopped)
  • 1 tbsp Ginger (finely chopped)
  • 2 clove Garlic (finely chopped)
  • 1 Carrot (diced or cut into strips)
  • 1 cup Bean sprouts (fresh)
  • Soy sauce (to taste, divided for seasoning meats and the final rice)
  • Oyster sauce (to taste)
  • Worcestershire sauce (to taste)
  • Garlic salt (for seasoning the meats)
  • Onion salt (for seasoning the meats)
  • Salt (for the shrimp (do not use in the rice))
  • Vegetable oil (for sautéing)

Steps

    In a pot, place one and a half cups of rice and dry-toast for about 5 minutes until it slightly changes color.

    Add two cups of water to the toasted rice. Cook over medium-low heat for approximately 20 minutes until the water is absorbed and the grain is cooked but firm. Do not add salt to the rice.

    While the rice is cooking, cut the pork and chicken into small cubes. Leave the shrimp whole if they are small.

    Season the shrimp with salt, garlic salt, and onion salt. Season the chicken and pork with garlic salt, onion salt, and a dash of soy sauce.

    In a large skillet or wok with a little oil, sauté the shrimp for about 7 minutes. Remove and set aside.

    In the same skillet, sauté the chicken and pork separately (as they require more time than the shrimp) until well browned.

    When the pork is nicely browned, add the diced ham and fry for a couple of additional minutes. Remove and set aside with the other meats.

    In the same skillet, add the green onion stalks, celery, chopped ginger, chopped garlic, carrot, and bean sprouts. Cook the vegetables for 2 to 3 minutes. Remove from heat and set aside.

    Lightly clean the skillet, add a splash of oil and cook the beaten eggs, stirring constantly to form small pieces.

    Return all cooked vegetables to the skillet with the egg and mix well.

    Incorporate all the meats (chicken, pork, shrimp, and ham) into the skillet and mix with the vegetables.

    Add the cooked rice to the skillet. Add oyster sauce, soy sauce, and Worcestershire sauce to taste.

    Keep over very low heat and stir constantly for about 5 minutes so that the flavors meld and the rice finishes frying.

Notes

It is essential not to add salt to the rice during its initial cooking, as the sauces (soy, oyster, and Worcestershire) are naturally high in sodium and could make the final dish too salty. It is recommended to cook the meats separately to ensure each one reaches the perfect cooking point.
