Ingredients
- 1.5 cup White rice (browned before cooking)
- 2 cup Water (for cooking the rice)
- 0.5 lb Chicken breast (cut into small cubes)
- 0.5 lb Pork (cut into small cubes)
- 0.5 lb Shrimp (small and whole)
- 0.25 lb Ham (pork or turkey, diced)
- 4 Eggs (beaten)
- Green onion stalks (chopped)
- Celery (chopped)
- Ginger (finely chopped)
- Garlic (finely chopped)
- Carrot (diced or cut into strips)
- Bean sprouts (fresh)
- Soy sauce (to taste, divided)
- Oyster sauce (to taste)
- Worcestershire sauce (to taste)
- Vegetable oil (for sautéing)
- Garlic salt (to taste for seasoning meats)
- Onion salt (to taste for seasoning meats)
- Salt (to taste for the shrimp)
Steps
- 1
In a pot, brown 1.5 cups of dry white rice for approximately 5 minutes.
- 2
Add 2 cups of water to the browned rice. Cook for about 20 minutes until the rice is perfectly done. Note: Do not add salt to the rice, as the sauces added later are salty.
- 3
Season the shrimp with salt, garlic salt, and onion salt.
- 4
Season the chopped chicken and chopped pork with garlic salt, onion salt, and a splash of soy sauce.
- 5
In a separate bowl, beat the 3 or 4 eggs very well.
- 6
In a large skillet or wok with a little oil, sauté the shrimp for about 7 minutes. Remove and set aside.
- 7
In the same skillet, sauté the chicken and the pork separately (as they require more time than the shrimp) until they are well cooked and browned.
- 8
When the pork is nicely browned, add the diced ham and fry for a short moment.
- 9
Remove the meats and, in the same skillet, sauté the green onion stalks, celery, ginger, minced garlic, carrot, and bean sprouts. Cook for 2 to 3 minutes and remove from heat.
- 10
Clean the skillet slightly if necessary, add a splash of oil, and cook the beaten eggs until set.
- 11
Return all the cooked vegetables to the skillet with the eggs.
- 12
Incorporate all the meats (chicken, pork, shrimp, and ham) into the skillet and mix well.
- 13
Add the cooked rice to the mixture.
- 14
Add oyster sauce, soy sauce, and Worcestershire sauce to taste. Mix vigorously to integrate the flavors.
- 15
Cook over very low heat, stirring constantly for a final 5 minutes before serving.
Notes
It is important not to add salt to the rice while it cooks in water, as the soy sauce and oyster sauce provide enough sodium to the final dish. It is recommended to cook the meats separately to ensure each reaches its ideal cooking point.
