Classic Spaghetti Aglio e Olio

Ingredients
- 250 g Spaghetti (preferably a high-quality variety)
- 4 Garlic (thinly sliced)
- 60 ml Extra Virgin Olive Oil (use high-quality oil)
- 0.5 tsp Chili flakes (or to taste)
- 0.5 Bund Fresh parsley (finely chopped)
- Salt (for the pasta water and for seasoning)
- Pecorino or Parmesan (optional for garnish)
Steps

Bring a large pot of water to a boil and salt generously.

Add the spaghetti to the boiling water and cook according to package instructions until al dente.

While the pasta is cooking, peel the garlic and cut into very thin slices. Finely chop the parsley.

Heat the olive oil in a large pan over medium heat. Add the sliced garlic and chili flakes.

Sauté the garlic gently until it becomes lightly golden brown and releases its aroma. Be careful not to let it burn, as it will otherwise become bitter.

Just before the spaghetti is ready, reserve a ladle of the starchy pasta water and set aside.

Drain the spaghetti and add directly to the pan with the garlic oil.

Add a splash of the pasta water and the chopped parsley. Mix everything well until the pasta is evenly coated with the oil.

Arrange the pasta on plates and sprinkle with grated cheese as desired.
Notes
The secret of this dish lies in the quality of the olive oil and in browning the garlic only very lightly. The pasta water helps to create an emulsion that binds the sauce to the pasta.
