Ingredients

  • 500 g ground beef (minced beef)
  • 1 onion (grated)
  • 2 cloves garlic (minced)
  • 0.25 cup fresh parsley (chopped)
  • 1 tsp ground cumin (part of simple spices)
  • 1 tsp ground coriander (part of simple spices)
  • 1 tsp paprika (part of simple spices)
  • salt and black pepper (to taste)
  • 0.5 cup Greek yogurt (for garlic yogurt sauce)
  • 1 clove garlic (minced, for yogurt sauce)
  • 0.5 red onion (thinly sliced, for sumac onions)
  • 1 tsp sumac (for sumac onions)
  • 4 flatbreads (warm)

Steps

  1. 1

Preheat your oven to 200°C (400°F).

  2. 2

In a large bowl, combine the ground beef, grated onion, minced garlic, spices (cumin, coriander, paprika), salt, pepper, and fresh parsley.

  3. 3

Mix the ingredients thoroughly until well combined.

  4. 4

Press the beef mixture evenly onto a baking tray, spreading it out to the edges.

  5. 5

Using a knife or spatula, press shallow notches into the meat to create a grid pattern; this helps with browning and makes it easier to separate into strips later.

  6. 6

Place the tray in the oven and bake until the meat is cooked through and browned on top, approximately 15-20 minutes.

  7. 7

While the meat cooks, prepare the garlic yogurt sauce by mixing the Greek yogurt with minced garlic.

  8. 8

Prepare the sumac onions by tossing sliced red onions with sumac.

  9. 9

Once the kebabs are cooked, place the flatbreads directly onto the tray for a minute to soak up the juices and warm through.

  10. 10

Separate the meat into strips along the notches and serve on the flatbreads with the garlic yogurt and sumac onions.

Notes

The notches in the meat are key for texture and easy portioning. You can add other toppings like fresh tomatoes, cucumbers, or hot sauce as desired.
