Ingredients
- 3 very ripe bananas (Overripe; peeled)
- vanilla Greek yogurt (Use a higher-fat yogurt for a less icy texture when frozen; amount as needed to spread in a layer)
- strawberries (Sliced; amount as needed for a layer)
- dark chocolate (Melted; amount as needed to cover the bark)
- peanuts (Chopped; amount as desired for topping)
- sprinkles (Amount as desired for topping)
- parchment paper (For lining the sheet pans so the bark does not stick)
Steps
- 1
Line two quarter-sheet pans with parchment paper so the bark will not stick.
- 2
Place the peeled very ripe bananas between the prepared sheet pans and smush them flat into an even layer.
- 3
Spread a layer of vanilla Greek yogurt over the flattened bananas. Higher-fat yogurt will produce a less icy texture when frozen.
- 4
Arrange a layer of sliced strawberries over the yogurt.
- 5
Freeze the layered bark until solid, a few hours.
- 6
Melt the dark chocolate, then spread it over the frozen yogurt and strawberry layer.
- 7
Immediately sprinkle the chopped peanuts and sprinkles over the melted chocolate, before the chocolate freezes.
- 8
Return the bark to the freezer until fully set. Depending on how ripe the bananas were, it may need additional time to harden.
- 9
Chop the frozen bark into bite-sized pieces and enjoy. Store it in the freezer.
Notes
The author does not provide measurements for the yogurt, strawberries, chocolate, peanuts, or sprinkles; use enough to create the described layers and toppings. The bark should remain stored in the freezer.
