Ingredients
- 305 g Water (Approximately 1 1/4 cups plus 1 tablespoon)
- 1 tsp Yeast
- 380 g All-purpose flour (Approximately 3 cups)
- 2 tbsp Olive oil
- 1 tsp Salt
Steps
- 1
Place the water and yeast in a mixing bowl and stir to combine.
- 2
Add the flour and mix until no dry flour remains. Cover the bowl and let the dough rest for 30 minutes.
- 3
Add the salt and olive oil to the dough.
- 4
Perform stretch-and-folds followed by coil folds. Complete the folds consecutively, with no waiting time between fold types.
- 5
Cover the dough and leave it to rest for 1 1/2 hours.
- 6
Generously flour a sheet of baking paper. Gently transfer the dough onto the floured paper, taking care not to deflate it.
- 7
Gently stretch the dough from the sides, then divide it into 6 pieces.
- 8
Leave the dough pieces uncovered for 10 minutes.
- 9
Bake the dough at 440°F with steam for 10 minutes.
- 10
Reduce the oven temperature to 380°F and continue baking for another 15 minutes, or until the ciabatta is golden brown.
Notes
The source specifies baking with steam but does not describe a particular steaming method.
