Ingredients
- 1 tsp yeast
- 2 tbsp sugar
- 275 g milk (270g for the dough plus 1 tsp for the chocolate dough; additional milk is used for brushing before baking.)
- 380 g flour (Plus extra flour for the work surface, amount unspecified.)
- 1 tsp salt
- 43 g butter (Softened for the dough; additional butter is brushed over the baked bread, amount unspecified.)
- 2 tbsp cacao powder (Added to one portion of the dough.)
- chocolate chips (Sprinkle over the rolled dough; amount unspecified.)
- 6 tbsp chocolate spread (1 tbsp for each of the 6 triangles.)
Steps
- 1
Place the yeast, sugar, and lukewarm milk in a bowl and mix them together.
- 2
Add the flour and mix until combined.
- 3
Add the salt and softened butter. Coil-fold the dough until the butter is fully incorporated.
- 4
Divide the dough into two equal portions. Leave one portion plain and cover it.
- 5
Add the cacao powder and 1 tsp milk to the second portion. Knead until the dough is evenly dark, then cover it.
- 6
Let both covered dough portions rise for about 2 hours, or until doubled in size.
- 7
On a floured surface, flatten the white dough. Shape the chocolate dough into a ball and place it in the middle of the white dough.
- 8
Close the white dough completely around the chocolate dough, then roll the combined dough out.
- 9
Sprinkle chocolate chips over the rolled dough.
- 10
Cut the dough into 6 triangles, as shown in the source video.
- 11
Add 1 tbsp chocolate spread to each triangle, then roll each triangle up like a croissant.
- 12
Arrange the shaped pieces on a baking tray lined with parchment paper. Cover and let rest for 15 minutes.
- 13
Brush the rested dough with milk.
- 14
Bake at 355°F (180°C) for 30 minutes, or until golden brown.
- 15
As soon as the bread comes out of the oven, brush it with butter and cover it with a clean kitchen towel until warm.
Notes
The amounts of chocolate chips, milk for brushing, and butter for brushing after baking are not specified. The source does not specify the flouring amount for the work surface.
