A high-protein, lower-calorie version of the classic Thai street food dish, using fresh rice noodles and a savory soy-based sauce.

- Chinese broccoli (chopped; stalks and leaves separated)
- 1 garlic (clove, chopped)
- 1 tsp sesame oil
- 250 g chicken breast (raw, chopped)
- 250 g fresh rice noodles (chopped into thick slices and separated; can sub for prepared thin rice noodles)
- 1 egg
- 1 egg white
- white pepper (to taste)
- salt (to taste)
- 1 tbsp sweetener (such as Natvia)
- 1.5 tbsp low sodium soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tsp white vinegar (or rice wine)
- water (a dash for deglazing)
- chilli in vinegar (for garnish)
- green onion (chopped for garnish)
Steps

Chop your vegetables (separating the stalks and leaves of the Chinese broccoli) and the chicken breast.

Heat 1 tsp of sesame oil in a pan over medium-high heat. Add the chicken breast and season with salt and white pepper. Pan fry until the chicken is cooked through.

Add the chopped garlic and the stalks of the Chinese broccoli to the pan. Pan fry for 1-2 minutes.

Add a dash of water to the pan to deglaze, scraping up any browned bits.

Add the Chinese broccoli leaves and stir until they are slightly wilted.

Push the ingredients to the side of the pan. Add the egg and egg white, and scramble them until set.

Add the fresh rice noodles (or prepared thin rice noodles) to the pan and cook for 1-2 minutes.

In a small bowl, whisk together the sweetener, low sodium soy sauce, dark soy sauce, oyster sauce, and white vinegar.

Pour the sauce over the noodle mixture and toss well to ensure everything is coated evenly.

Garnish with chopped chilli in vinegar and green onions before serving.
Notes
If you cannot find fresh wide rice noodles at a Chinese grocer, you can substitute with standard pantry rice noodles, though they will be thinner. Ensure they are cooked according to package instructions before adding to the pan.
