Ingredients

  • 1 cup Vital wheat gluten
  • 0.75 cup Instant potato flakes
  • 0.75 cup Vegetable stock (For the wet mixture and for simmering; amount for simmering is not specified.)
  • 2 tbsp Apple cider vinegar (As suggested)
  • 0.5 tsp Salt
  • 0.5 tsp MSG
  • 1 tsp Poultry seasoning
  • 2 tsp Onion powder
  • 1 tsp Garlic powder
  • Vegetable stock (Additional stock for simmering; use enough to simmer the shaped dough. The recipe does not state an amount.)
  • Oil (For generously oiling the pan)

Steps

  1. 1

Place the vital wheat gluten and instant potato flakes in a mixing bowl and combine. In a separate bowl, whisk together the measured vegetable stock, apple cider vinegar, salt, MSG, poultry seasoning, onion powder, and garlic powder.

  2. 2

Pour the wet mixture into the dry mixture. Mix until incorporated, then knead for several minutes, pushing the dough down, turning it, and folding it over itself. A towel under the cutting board can help keep it from moving.

  3. 3

Keep the dough very dry; do not add extra liquid. Form it into a log, then pull from both ends to stretch it as long as possible without tearing.

  4. 4

Cut two lengthwise lines into the dough to make three attached strands. Braid the strands, tucking the loose ends into the dough.

  5. 5

Stretch the braided rope and knot it as many times as possible, starting near the middle. Tuck any remaining ends into the dough.

  6. 6

Heat a generously oiled pan. Sear the knotted dough on each side.

  7. 7

Transfer the seared dough to vegetable stock and simmer gently for one hour. Keep the stock at a lazy simmer and do not let it boil, as boiling may make the seitan bready.

  8. 8

Remove the pot from the heat. Once cooled, leave the seitan in the stock in a container in the refrigerator overnight.

  9. 9

Shred the seitan. It may then be sautéed or marinated, and used in dishes that call for shredded chicken.

Notes

The recipe does not specify the amount of stock needed for simmering or the quantity of pan oil. The creator also describes an optional Instant Pot method and optional added oil, but those are variations rather than the main recipe method.
