Ingredients
- 2 cup heavy whipping cream (chilled)
- 14 oz sweetened condensed milk (one standard can, chilled)
- 2 tbsp matcha powder (Barista Pro Blend recommended for a deeper flavor)
Steps
- 1
In a large chilled mixing bowl, pour in 2 cups of heavy whipping cream.
- 2
Using a hand mixer or stand mixer, whip the cream on medium-high speed until stiff peaks form. Be careful not to over-whip into butter.
- 3
In a separate medium bowl, combine the 14 oz can of sweetened condensed milk and 2 tablespoons of matcha powder.
- 4
Whisk the matcha and condensed milk together vigorously until the mixture is completely smooth and no green clumps remain.
- 5
Gently fold a small scoop of the whipped cream into the matcha mixture to lighten it.
- 6
Pour the matcha mixture into the remaining whipped cream and gently fold with a spatula until the color is uniform and no white streaks remain, being careful not to deflate the air.
- 7
Transfer the mixture into a freezer-safe container or loaf pan and smooth the top with a spatula.
- 8
Cover with plastic wrap, pressing it directly onto the surface of the cream to prevent ice crystals from forming.
- 9
Freeze for at least 6 hours, or preferably overnight, until firm.
- 10
Serve as is, or with an extra shot of concentrated matcha poured over the top for a 'bold' finish.
Notes
For the best results, ensure your mixing bowl and whisk are chilled before whipping the cream. Using a high-grade matcha like a Barista Pro Blend ensures a vibrant green color and a smooth, non-bitter taste.
