Notes
To soften butter quickly, take it out of the fridge 2 hours before baking or microwave for about 7 seconds (do not melt). For freezing: roll dough into balls and flash-freeze on a tray before transferring to an airtight container. Bake from frozen by adding 1-2 minutes to the cook time. Ensure you measure flour by scooping into the cup and leveling with a knife.
