- 8 oz Mini mozzarella balls (also known as bocconcini or ciliegine)
- 1 bunch Fresh basil (leaves picked and divided for all three recipes)
- 2 tbsp Balsamic glaze (for drizzling)
- 3 tbsp Extra virgin olive oil (divided for drizzling)
- 2 Nectarines (sliced into wedges)
- 4 oz Prosciutto (thinly sliced)
- 4 oz Brie cheese (cut into small wedges)
- 1 tbsp Honey (for drizzling)
- 2 tbsp Pistachios (chopped)
- 8 oz Philadelphia cream cheese (room temperature for easier spreading)
- 0.25 cup Green olives (pitted and halved)
- 1 tbsp Capers (drained)
- 2 tbsp Basil pesto (store-bought or homemade)
- 1 Lemon (zested)
- Crackers or toasted bread (for serving)
Steps
- 1
Prepare the Caprese Bites: Slice the cherry tomatoes in half.
- 2
On a serving platter, arrange the tomato halves with mini mozzarella balls and fresh basil leaves.
- 3
Finish the Caprese Bites with a drizzle of extra virgin olive oil and balsamic glaze.
- 4
Prepare the Prosciutto, Brie & Nectarine Bites: Slice the nectarines into wedges and cut the brie into small pieces.
- 5
Using cocktail sticks, layer a nectarine slice, a piece of brie, a fold of prosciutto, and a basil leaf.
- 6
Drizzle the skewers with honey and sprinkle with chopped pistachios.
- 7
Prepare the Cream Cheese Dip: Spread the Philadelphia cream cheese onto a serving plate or shallow bowl in an even layer.
- 8
Top the cream cheese with green olives, capers, dollops of basil pesto, and fresh lemon zest.
- 9
Finish the dip with a generous drizzle of extra virgin olive oil.
- 10
Serve the dip immediately with toasted bread or your favorite crackers.
Notes
For the best flavor, ensure the cream cheese is at room temperature before spreading so it is light and airy. These appetizers are best assembled shortly before serving to keep the basil fresh and the crackers crisp.
