Ingredients

  • 2 potatoes (large, peeled and cubed)
  • 2 tbsp butter
  • 2 cloves garlic (minced)
  • 0.25 cup milk
  • 0.25 cup all-purpose flour
  • 0.5 cup cornstarch
  • 0.25 cup parmesan cheese (grated)
  • 1 tbsp parsley (fresh, finely chopped)
  • 0.5 tsp salt (or to taste)
  • 0.5 tsp garlic powder
  • 0.25 tsp paprika
  • 0.5 tsp chicken bouillon powder
  • oil (for frying)

Steps

    Peel and cube the potatoes. Place them in a pot of salted water and boil until tender, about 10-15 minutes.

    Drain the potatoes and mash them thoroughly until smooth.

    In a small pan over medium heat, melt the butter and sauté the minced garlic until fragrant.

    Add the milk and flour to the pan with the garlic butter, stirring constantly until a thick paste forms.

    In a large mixing bowl, combine the mashed potatoes, the flour paste, cornstarch, grated parmesan cheese, chopped parsley, salt, garlic powder, paprika, and chicken bouillon powder.

    Mix until a dough forms. If the dough is too sticky, add a little more cornstarch.

    Roll the potato dough out between two sheets of parchment paper to about 1/4 inch thickness.

    Use two different sized circular cutters to cut out ring shapes from the dough.

    Heat oil in a deep pan to 350°F (175°C).

    Fry the potato rings in batches until they are golden brown and crispy on both sides.

    Remove the rings from the oil and drain on a wire rack or paper towels. Serve immediately.

Notes

For extra crunch, ensure the oil is hot enough before frying. You can also bake these at 400°F (200°C) for about 15-20 minutes, flipping halfway through, though they will be less crispy than fried.
