Ingredients

  • 15 oz Black beans (1 can, low- or no-sodium; rinsed and drained)
  • 0.25 cup Almond flour
  • 0.5 cup Cocoa powder (Organic if possible)
  • 0.5 cup Coconut sugar
  • 0.25 cup Brown sugar
  • 1 tbsp Avocado oil
  • 2 tbsp Plant milk
  • 1 tsp Apple cider vinegar
  • 1 tsp Baking powder
  • 0.5 tsp Baking soda
  • 2 tbsp Flaxseed meal (Combined with 6 tbsp water to make 2 flaxseed eggs)
  • 6 tbsp Water (For the flaxseed eggs)
  • 0.75 cup Vegan chocolate chips (Divided; half is mixed into the batter and half is used as a topping)

Steps

    Prepare the flaxseed eggs by whisking together the flaxseed meal and water in a small bowl. Set aside for 10–15 minutes, until the mixture thickens to a gel-like consistency.

    Preheat the oven to 360°F (about 182°C). Line an 8-by-8-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Rinse and drain the canned black beans thoroughly. Pat them dry if they are especially wet.

    Add the black beans, almond flour, cocoa powder, coconut sugar, brown sugar, avocado oil, plant milk, apple cider vinegar, baking powder, baking soda, and prepared flaxseed eggs to a food processor.

    Process until the mixture is completely smooth, stopping to scrape down the sides as needed. Remove the food processor blades carefully before proceeding.

    Add half of the vegan chocolate chips to the brownie mixture and stir them in evenly by hand.

    Transfer the batter to the parchment-lined 8-by-8-inch pan and spread it into an even layer. Sprinkle the remaining chocolate chips over the top.

    Bake at 360°F for 35–38 minutes. The brownies should look set around the edges and mostly set in the center; the stated baking time is for sea level.

    Allow the brownies to cool completely in the pan before lifting them out with the parchment and slicing. Serve and enjoy.
