Ingredients

  • 800 g Chicken breast (cut into bite-sized pieces)
  • 0.5 cup 0% Greek yogurt (for marinade)

  • 1200 g Potatoes (diced into small cubes)
  • Olive oil spray (few sprays)
  • 2 tsp Dried oregano (for potatoes)
  • 1 tbsp Garlic powder (for potatoes)
  • 2 tsp Paprika (for potatoes)
  • 1 tsp Salt (for potatoes)
  • 0.5 tsp Black pepper (for potatoes)
  • 1 tbsp Lemon juice (to finish potatoes)
  • 1 Cucumber (large, diced for salad)
  • 2 Tomatoes (medium, diced for salad)
  • 0.5 Red onion (medium, sliced for salad)
  • 2 tbsp Parsley (chopped for salad)
  • 1 tbsp Lemon juice (for salad)
  • Salt (pinch, for salad)
  • 1.5 cups Greek yogurt (0%) (for tzatziki)
  • 0.5 Cucumber (grated and squeezed dry for tzatziki)
  • 2 Garlic (cloves, grated for tzatziki)
  • 1 tbsp Lemon juice (for tzatziki)
  • 0.5 tsp Salt (for tzatziki)
  • Black pepper (pinch, for tzatziki)
  • Dill (added to tzatziki (mentioned in instructions))

Steps

    In a large bowl, combine the chicken breast pieces, 0.5 cups Greek yogurt, 1 tbsp olive oil, 2 tbsp lemon juice, 4 minced garlic cloves, 2 tsp oregano, 2 tsp paprika, 1.5 tsp salt, and 1 tsp black pepper.

    Mix well to ensure the chicken is thoroughly coated, then cover and marinate for at least 30 minutes.

    Thread the marinated chicken onto skewers if available.

    Dice the potatoes into small cubes and place them in a bowl.

    Season the potatoes with 2 tsp oregano, 1 tbsp garlic powder, 2 tsp paprika, 1 tsp salt, 0.5 tsp pepper, and a few sprays of olive oil spray. Toss to coat.

    Place the potatoes in the air fryer and cook at 400°F (200°C) for 20 minutes, shaking the basket halfway through to ensure even browning.

    Once the potatoes are cooked, remove them from the air fryer and finish with 1 tbsp of lemon juice.

    Place the chicken skewers in the air fryer and cook at 400°F (200°C) for 12 minutes, or until the internal temperature is safe and the outside is lightly charred.

    Prepare the Greek salad by chopping the large cucumber, 2 medium tomatoes, 0.5 red onion, and 2 tbsp parsley.

    Add the chopped vegetables to a bowl with 1 tbsp lemon juice and a small pinch of salt, then mix well.

    For the tzatziki, grate 0.5 cucumber and squeeze out as much water as possible using paper towels or a clean kitchen towel.

    In a separate bowl, combine the squeezed cucumber with 1.5 cups Greek yogurt, 2 grated garlic cloves, 1 tbsp lemon juice, a pinch of dill, 0.5 tsp salt, and a pinch of black pepper. Mix until smooth.

    Assemble the bowls by dividing the potatoes, chicken, salad, and tzatziki evenly into 4 bowls and serve immediately.

Notes

If you do not have an air fryer, you can bake the chicken and potatoes in a conventional oven, though times may vary. For the tzatziki, ensure the cucumber is very dry to prevent the sauce from becoming watery.
