Ingredients
- 2 lb chicken (Any cut)
- 2 cup couscous
- 1 large onions (Or 2 medium onions, diced)
- 3.5 cloves garlic (Chopped or minced; source specifies 3–4 cloves)
- 3.5 tomatoes (Diced; source specifies 3–4 tomatoes)
- 1 tbsp tomato paste
- parsley (1 handful)
- 2 cup water for the chicken
- salt (As needed)
- black pepper (As needed)
- 4 cup water for the couscous (Added with the couscous)
- ice cubes (A few, optional extra tip, added over the couscous to stop cooking)
- kefalograviera cheese (Freshly grated, for serving)
- Greek horiatiki salad (For serving)
- fresh bread (Freshly baked, for serving)
Steps
- 1
Preheat the oven to 400°F (200°C).
- 2
In a large skillet or pan, sauté the chicken until it is browned. Remove the browned chicken from the pan and set it aside.
- 3
In the same pan, sauté the diced onions and chopped or minced garlic until softened.
- 4
Add the tomato paste and cook for 5 minutes, stirring.
- 5
Add the diced tomatoes, salt, pepper, and parsley. Let the mixture cook for another 5 minutes.
- 6
Add 2 cups of water for the chicken and stir the sauce.
- 7
Transfer the chicken and tomato sauce to an oven pan or casserole.
- 8
Bake in the preheated oven for about 30 minutes.
- 9
Add the couscous and the additional 4 cups of water to the pan. Mix well so the couscous is evenly spread throughout the dish.
- 10
Bake for another 15–20 minutes. Remove the dish before all the juices or liquid are absorbed; some liquid should remain.
- 11
As an extra tip, place a few ice cubes over the couscous to stop the cooking process immediately, then mix.
- 12
Serve with freshly grated kefalograviera, Greek horiatiki salad, and freshly baked bread.
Notes
The source does not specify the cooking oil used for sautéing the chicken and vegetables, so none was added to the ingredient list. The source also does not specify the exact amount of parsley, salt, pepper, ice, kefalograviera, salad, or bread. Keep some liquid in the finished dish rather than baking until dry.
